the importance of grease traps in commercial kitchens

what is a grease trap?

a grease trap is a device that is designed to intercept FOG from wastewater before it enters the sewer system. It works by slowing down the flow of wastewater and allowing FOG to float to the top, where it is trapped and separated from the water. The trapped FOG can then be collected and disposed of properly.

grease traps are essential components of any commercial kitchen, as they help prevent FOG from entering the sewer system. FOG can cause blockages and backups in sewer lines, which can result in costly repairs and environmental damage. In addition, untreated FOG can lead to the formation of fatbergs, which are large masses of solidified grease that can cause major problems for municipal sewage systems.



Regular maintenance and cleaning of grease traps are essential to keep them operating effectively. The frequency of cleaning depends on several factors, such as the size of the trap, the volume of FOG produced by the kitchen, and local regulations. However, most grease traps should be cleaned at least once every three months.

our colleague and co-owner Robert Menzies attended the summit in Liverpool on 18th and 19th October as a guest speaker.

brave saints lose to Celtic

the reigning Scottish champions, Celtic, travelled to Perth on Saturday to take on our friends at St Johnstone in the Scottish Premiership.


the game was televised on Sky Sports and was also watched by the team at serious in the stands but despite a brave performance and scoring in the final minutes it wasn't enough to secure a draw with Celtic scoring again with virtually the last kick of the ball.  Heart wrenching for the team but one they can take some positives from.

serious completes MBO

SME credit fintech Caple and Close Brothers have supported the management buy-out of Serious, a sewage, grease and waste-water management company. 


The investment has enabled existing Managing Director Jeremy Proctor, who has been running the business for the last five years, to buy out the founding shareholders with the help of two other business partners.  The founding shareholders were non-operational.


The MBO will enable the firm’s next phase of growth.  The management team can now implement its plans and invest in the business.  As a result of the transaction, the business expects to grow by around 50% in the next two years and create up to 20 new jobs. 


Dominic Buch, co-founder and managing partner of Caple, said: 


“Serious is a successful business with an excellent management team.  To invest in the business that team needed to be able to buy out the retiring shareholders.  Our deal demonstrates how we can support a new generation of owners with the finance they need to innovate, implement their expansion plans, and drive growth. 


With the economy still recovering from Covid, we need to support this new generation of owners to provide the growth and jobs that the UK urgently needs.” 


Staffordshire-based Serious serves more than 15,000 commercial and domestic customers from six UK depots.  These include Marston’s, Whitbread’s and Admiral Taverns from the pub and leisure industry.  Customers also include football clubs such as Everton FC and Wolverhampton Wanderers to local authorities such as Cheshire East, Severn Trent Water and Scottish Water. 


Serious offers a breadth of services including engineering, installation and project management.  The MBO also enables Serious along with its new business partner, Robert Menzies, MD and owner of Able Services PDM to offer its clients a one-stop shop for all sewage, grease, drainage and waste-water management services. 


Jeremy Proctor, Managing Director of Serious, said: 


“Having run the business for the last five years, the management team know what we need to do to grow.  Serious has a fantastic customer base and we need to invest due to a growth in sales with some exciting new contracts but to implement these plans we need to take ownership.  With the help of our new business partners and the funding from Caple and Close Bro’s this has enabled us to complete the MBO, take control of the business and put our plans into practice.” 


what do the latest septic tank regulations mean for you

2020 regulations overview  


below is an overview and points on the general binding rules that have been issued by the government in relation to waste water being discharged to surface water. this only applies if you have a septic tank that currently discharges to a water course such as a stream, river or ditch. 

 

the following points have been taken from the Government websiteps://www.gov.uk/guidance/general-binding-rules-small-sewage-discharge-to-a-surface-wat 

use the correct treatment system 


you must use a small sewage treatment plant to treat the sewage if you’re discharging to surface water such as a river or stream. a small sewage treatment plant (also known as a package treatment plant) uses mechanical parts to treat the liquid so it’s clean enough to go into a river or stream.


discharges from septic tanks directly to surface water are not allowed under the general binding rules. 


new rules came into force on 1 January 2015. If your system was installed and discharging before 31 December 2014 you have an ‘existing discharge’. if your system was installed and discharging on or after 1 January 2015 you have a ‘new discharge'. once upon a time, you could discharge the separated waste water from within the septic tank through one of two ways:


  1. to a drainage field or soakaway system – here, the waste water percolates through holes or slots into the pipework, into the surrounding sub-soils. this provides a form of treatment of the water, and it allows the waste water to disperse safely without causing pollution  
  2. to a watercourse – the waste water would flow through a sealed pipe straight to a local watercourse such as a stream or a river 


so, What’s Changed? 


in a nutshell, you can no longer do option 2 above.  The reason for this is because the `quality’ of the waste water is no longer considered clean enough to flow straight into local watercourses without causing pollution. 


if you have a septic tank that discharges directly to a surface water, you will need to replace or upgrade your treatment system by 1 January 2020, or, when you sell your property if before this date. the discharge must not cause pollution of surface water or groundwater. 


this is the Environment Agency’s catch-all clause – if you pollute any water, anywhere, you’re breaking not only the General Binding Rules, but a whole host of laws and regulations, the result of which is that you, as either the property owner and/or the plant operator, can be prosecuted 

 

your treatment system must meet the right standards 


your treatment system must meet the relevant British Standard which was in force at the time of installation. The standards currently in force for new systems are: 

  • BS EN 12566 for small sewage treatment plants 
  • BS 6297:2007 for drainage fields 


have your treatment system regularly emptied and maintained 


you must get the sludge which builds up in your sewage treatment plant removed (de-sludged) before it exceeds the maximum capacity. this must be done by a registered waste carrier. As a minimum, you should have your treatment system de-sludged once a year.


if you sell your property - tell the new owner about the sewage treatment system 


if you sell your property, you must tell the new owner in writing that a sewage discharge is in place and include the following points 

  • a description of the treatment plant and drainage system 
  • the location of the main parts of the treatment plant, drainage system and discharge point 
  • details of any changes made to the treatment plant and drainage system 
  • details of how the treatment plant should be maintained 
  • when was the system last de-sludged and serviced 

 

what are the options? 


there are two main ways in which you can comply with the new regulations: 


  1. swap your septic tank for a sewage treatment plant – sewage treatment plants produce a cleaner form of water, and it’s considered clean enough to discharge straight to a watercourse 
  2. install a drainage field or soakaway system – this will take the waste water from your septic tank, and disperse it safely into the ground without causing pollution.
